3 cups all-purpose flour
2 tablespoons baking powder
2 teaspoons salt
2 tablespoons white sugar
2 1/2 cups of milk
2 eggs
1/4 cup butter, melted
1/2 cup Craisins
3 ounces white chocolate chips
Mix all the dry ingredients in a large mixing bowl (excluding the Craisins and white chocolate chips). Add the milk, eggs and melted butter. Mix all the ingredients until smooth. Heat the griddle up to 325 degrees. When you drop water on the griddle, it should disintegrate. That means the griddle is ready. Pour even-sized dollops of batter onto the skillet, adding 4-5 white chocolate chips and 4-5 Craisins onto each dollop (depending on how much you want in each pancake). Flip the pancakes when the top side bubbles have popped.
This was Bryce's concoction. He's really good at making pancakes and decided to add some special ingredients. We found the main recipe off of AllRecipes.com.
We didn't add the chips into the girls' pancakes because we just don't want them having a lot of sugary stuff before bedtime and these pancakes were definitely SWEET.
I liked them a lot and will be eating the left-overs for breakfast tomorrow morning. Mmmm.
