Roasted Garlic Parmesan Asparagus

Asparagus
Olive Oil
Minced Garlic
Parmesan Cheese

Pre-heat a pan, then put olive oil in the pan. Add the asparagus & cover for 2 minutes. Then, add the minced garlic & Parmesan cheese. Make sure the garlic is roasted, not burned. Once garlic is roasted and asparagus is dark green, remove from the pan and sprinkle with Parmesan cheese.

I actually ate this....and it was good! B liked it as well, although I overcooked it a little bit. Next time, maybe a little bacon?

Goat Cheese Nachos

Diced Tomatoes
Goat Cheese
1/2 green bell pepper, chopped
1/2 yellow bell pepper, chopped
Ground turkey, cooked
Mozzarella cheese, sliced
Quinoa Cooked
Tortilla Chips

This is literally a "throw-everything together" type of nachos. Heat the bell peppers, ground turkey (I used leftover meatloaf), diced tomatoes & 1-2 slices of Mozzarella cheese. Then, add in the quinoa (again, leftovers). Before you put all this loveliness on the chips, sprinkle the goat cheese on the chips, then goop everything on. MMMMMM.

Alfredo Italian Meatloaf

1 lb. ground turkey
1/2 jar Alfredo sauce (14.5 oz jar)
1 egg
1/2 cup Italian bread crumbs
2 teaspoons Italian seasoning
1 teaspoon parsley flakes
1 teaspoon garlic powder
1/8 teaspoon sugar
Mozzarella & Parmesan cheese, shredded

Preheat the oven to 450 degrees F. Combine all ingredients in a large mixing bowl. Put into a greased baking dish, top with a little bit of cheese and bake for 45 minutes. With about 10 minutes left, add more cheese if desired.

Yes, this is the same as the Italian Meatloaf, but the Alfredo version!! Perfectly paired with pasta or egg-stuffed baked potatoes. YUM!

Italian Meatloaf

1 lb. ground turkey
1 can tomato sauce (8 oz)
1 egg
1/2 cup Italian bread crumbs
2 teaspoons Italian seasoning
1 teaspoon parsley flakes
1 teaspoon garlic powder
1/8 teaspoon sugar
Mozzarella & Parmesan cheese, shredded

Nice variation of a meatloaf and it's zesty, yummy and perfectly paired with pasta!

Apple Delight

5 apples, cut into chunks
Honey
Cookie or graham cracker crumbles

Steam the apple chunks for approx 12 minutes. Pour the apples into a bowl, add as much honey as you want. Take the crumbles, add them in and mix well. Serve warm with whipped cream.

I had some super soft apples I needed to use, so I thought, 'Why not?' It was so good. Even B liked them and the girls, of course, ate it up. And, uh....I had two bowls.

Roasted Brussel Sprouts

2-3 cups Brussels sprouts
1 tablespoons olive oil
1 tablespoon balsamic vinaigrette
2-3 tablespoons honey
Parmesan cheese

Preheat the oven to 450 degrees F. Trim the stems of the Brussels sprouts and cut the large ones in half. Toss in the olive oil and place on a large baking sheet. Roast for about 20 minutes. While baking, combine the vinaigrette and the honey. When the sprouts are done baking, toss them in the vinaigerette-honey mixture. Sprinkle some Parmesan cheese on top if preferred.

Not only did the girls love these, so did my best friend! B likes them without the sauce, but manfully ate them anyways.

Alfredo Chicken Parmesan Casserole

2 tablespoons olive oil
2 tablespoons minced garlic
6 boneless, skinless chicken thighs
2 cups Alfredo sauce
8 ounces mozzarella cheese, shredded
4 ounces Parmesan cheese
Garlic Croutons
Basil
Red Pepper Flakes

Preheat the oven to 350 degree. On the bottom of the baking pan, spread the olive oil and minced garlic around to coat the bottom. Sprinkle some red pepper flakes, then place the chicken in the pan. Spread the Alfredo sauce over the top of the chicken, followed by sprinkling some basil and half the cheeses. Add the garlic croutons on top and the rest of your cheeses. Bake for 35 minutes or until cheese starts to brown.

Yep, this recipe mirrors the regular Chicken Parmesan Casserole except it's made with Alfredo sauce instead of spaghetti sauce. I also added chopped red bell pepper, yellow onion and zucchini on top the chicken before I spread the spaghetti sauce. We need more veggies in our diet and this will do it!
