Goat Cheese Nachos

Diced Tomatoes
Goat Cheese
1/2 green bell pepper, chopped
1/2 yellow bell pepper, chopped
Ground turkey, cooked
Mozzarella cheese, sliced
Quinoa Cooked
Tortilla Chips

This is literally a "throw-everything together" type of nachos. Heat the bell peppers, ground turkey (I used leftover meatloaf), diced tomatoes & 1-2 slices of Mozzarella cheese. Then, add in the quinoa (again, leftovers). Before you put all this loveliness on the chips, sprinkle the goat cheese on the chips, then goop everything on. MMMMMM.

Quinoa Soup

2 cups prepared quinoa
1 cup water
1 cup chicken broth
1/4 cup chopped onion
1 can sun-ripened tomato soup
2 tablespoons garlic
1 package Lipton's Onion Soup
Salt & Pepper

Keep your prepared quinoa in the pot. Add the tomato soup, onion soup, water & chicken broth. Mix well and heat on low for 2-3 minutes. Add in the garlic, onion, salt and pepper to taste. Heat on low for 2-3 minutes and serve.

Super simple and super delicious. I may add veggies next time. Let's just put it this way....the girls ate 2 bowls each!

Spicy Mango Chicken With Quinoa

3 boneless, skinless chicken thighs
Spicy Mango marinade
1/2 red bell pepper
1 cup quinoa
2 cups water

Bring water to a boil. Add quinoa and cover. Cook over medium heat until water is absorbed (12 minutes). Remove from heat and let set for 15 minutes. Cut up the chicken, place in pan with copious amounts of marinade. Add cubed bell pepper. Cook on medium heat until chicken is done. Place the chicken and mixture on top of the quinoa and serve.

This is the first time I've ever used quinoa and I loved it. So easy to make (except I burned it a little...not a surprise for me). I would definitely make this dish again. Super yummy.
