Sausage Balls

1 lb sausage
2 1/2 cups Bisquick
2 cups shredded cheddar cheese

Preheat the oven to 400 degrees F. Mix all ingredients together; roll into balls, about 1 inch. Bake for 10-12 minutes.

This is courtesy of my best friend, Ashley. I LOVE her sausage balls (no pun intended)! They're one of my favorites to snack on or to eat at breakfast with a little maple syrup. YUM.

Texas Trash

8 oz. cream cheese, softened
1 cup sour cream
2 cans refried beans
1 packet taco seasoning
2 cups shredded cheddar cheese
2 cups shredded Monterrey jack cheese
Salsa

Preheat the oven to 350 degrees F. In a large mixing bowl, combine the cream cheese and sour cream. Add in the refried beans, then the taco seasoning. Spread mixture into a greased 9x13 pan. Drop salsa onto the top, then sprinkle with the cheese. Bake 25-30 minutes until cheese is melted. Eat with lots of tortilla chips!

I made this for a party and it was GONE. Two bags of chips will get 'er done. Obviously not healthy, but easy to make and yummy to eat.

Chicken Mini Taquitos

6 slices of bacon, chopped
4 oz. cream cheese, softened
2 cans of chicken breast, drained (12.5 oz)
8 flour tortillas (10 in)
Vegetable Oil

Cook the bacon until crisp. Remove from the heat and set on paper towels. In a medium bowl, stir the chicken, bacon and cream cheese together until well-mixed. Cut each tortilla into 3, 3 inch circles. Spoon about 2 tablespoons of the chicken mixture onto the tortilla rounds. Roll the tortilla around the mixture and secure with a toothpick. Heat up the oil and place the taquitos (in batches) in the oil until browned on all sides. Set the taquitos on a paper towel to dry and you're done.

Ooohh.....these were SO good and everyone ate them...all of them. I think I got to eat one. And they were easy to make! SCORE! I don't like oil popping on me, so I was nervous about these (especially since the filling came out every once in a while and started popping like crazy). I make these quite often now for parties. Delicious!

Ham And Cheese Sliders

12 dinner rolls
12 slices of ham
6 slices of Swiss cheese
1/4 cup mayo
1/4 cup Miracle Whip
1 tablespoon poppy seeds
1 1/2 tablespoons yellow mustard
1/2 cup butter, melted
1 tablespoon onion, minced
1 teaspoon Worcestershire sauce

Preheat the oven to 350 degrees. In a small bowl, mix the mayo and Miracle Whip (yuck). Spread onto both sides of the rolls. Layer with one slice of ham & 1/2 a slice of Swiss cheese. Place on a cookie sheet as close together as possible. Melt your butter, and mix together with the poppy seeds, yellow mustard, minced onion and Worcestershire sauce. Pour evenly over the rolls. Let them sit for 10 minutes. Place in the oven, covered with foil and cook for 12-15 minutes (so that cheese is nice and melted). Uncover and broil for 2 minutes longer.

These were super yummy and super easy to make (although I made my sauce before the sandwiches and the butter cooled...yikes). My girls loved them, the hubby loved them and I loved them. I would for sure make these again and again.
