Tuna And Black Bean Salad Wraps

1 can black beans, drained
1 can tuna (11 oz.), drained
1 can diced tomatoes
1/3 cup red onion, finely chopped
1 teaspoon cayenne pepper
1/4 cup olive oil
1 tablespoon lime juice
2 heaping tablespoons parsley
1/4 cup cilantro, chopped
Salt & Pepper
Lettuce Leaves

In a large mixing bowl, combine the beans, tuna, tomatoes, red onion, cayenne pepper, olive oil and lime juice. Chill for 20-30 minutes. Then add the parsley, cilantro, salt and pepper; mix well. Serve on lettuce leaves and eat like a taco!

In the summertime, it gets hot out here. I love easy meals and wanted something refreshing for those hot afternoon. This was soooo good! Even Sammie ate all of hers; I had about five. A nice crisp taste with the cilantro, lime and tuna.

Strawberry Summer Salad

1 bag of Hearts of Romaine lettuce, washed (or Salad Spinner-ed)
6 large strawberries, sliced
2 green onions, chopped
1/2 cup of sliced portobello mushrooms, chopped
1/2 cup of feta cheese
1/4 cup of Craisins
1 tablespoon of Italian Dressing or Sesame Dijon Dressing

Toss either dressing with the salad. Add onions, mushrooms, strawberries, Craisins and feta cheese. Mix together lightly with a wooden spoon or salad tongs. Add additional dressing if you want to insult the cook.

It's seriously making me want some right now.

Really fast and easy (I don't like to take a long time over meals...especially when I have a 3 year-old and a 17 month-old clinging to each leg). Normally I can't even eat salads when I'm pregnant, but I've been consuming these left and right. We never have left-overs.

Samantha liked the lettuce. Piper liked the strawberries. Me and Bryce liked it all. Yum.
