1 1/2 cups baby carrots
3 tablespoons honey
2 tablespoons brown sugar
1 tablespoon lemon juice
Rinse the carrots, then add about 1 inch of water into a pan; bring to a boil. Add the carrots and lower the heat to a simmer. Cover and cook for 8-10 minutes until softened. In a separate pan, add the honey, lemon juice and brown sugar. Mix well and bring to a boil. Drain the carrots and add them to the honey mixture. Toss to evenly coat and serve.
Yah, I know carrots are already sweet, BUT these are sooooo good. The girls ate them, I ate them and B kept eating them out of the pan when was done altogether. BOOM.

Grilled Cheese Pull-Apart Sandwiches
1 can Pillsbury Grand Flaky Biscuits (8 or 10 count)
1 can Pillsbury Buttermilk Biscuits (8 or 10 count)
1/2 box of Mexican Velveeta Cheese
1/2 cup melted butter
Lunchmeat
Preheat the oven to 350 degrees F. Put a small piece of the velveeta inside a biscuit and roll it up to hide the cheese. Alternate biscuits with cheese and lunchmeat. Place all of the balls side by side into a greased baking pan. Pour the melted butter over the top and bake for approx 25-30 minutes until brown and cooked. Pull apart and enjoy!
I like to use ham with my grilled cheese sandwiches and the biscuits make the sandwiches even tastier. This meal was devoured very quickly!! Perfect for a lunch or light dinner!

Feta Spaghetti Squash
2 small spaghetti squash, halved & seeded
1/4 yellow onion, chopped
Butter
Minced Garlic
Feta Cheese, crumbled
Preheat the oven to 450 degrees F. Spread some butter & minced garlic on the flesh of the squash, then lay the halves flesh-side down on a baking pan with aluminum foil. Bake for 30-40 minutes. When the squash is almost finished, saute the onions, butter & garlic until onions are soft. Pull the squash out and scrape the flesh into a glass bowl. Mix the squash with the onion mixture, then add the feta cheese (as much as you want).
I normally don't like vegetables, but I love feta. So I guess if you combine the two, it's a meal made in heaven. The girls even ate it, if that means anything at all! Easy to bake and easy to make!

Cowboy Noodles
10 eggs
3 packages of Ramen noodles
BBQ Sauce
Whatever else you want to add
Begin scrambling the eggs; about halfway cooked, add in a little BBQ sauce. Add whatever else you'd like (lunchmeat, chicken, veggies, onions, etc). Cook the Ramen noodles and rinse. Put the Ramen & eggs in a bowl and enjoy.
Not very specific, right? That's because I never make it the same twice. My favorite is to add cooked, chopped chicken, green onions, garlic, ham & feta cheese to the eggs, plus some cheddar cheese to the whole mixture, with a little bit of sour cream. Even the hubs dug it.
