2 eggs
2 cups pumpkin puree
1 cup evaporated milk
1 cup white sugar
1/2 cup self-rising flour
1/2 cup butter, melted
1 teaspoon vanilla extract
Ground Cinnamon
Pumpkin Pie Spice
Preheat the oven to 350 degrees. Mix all ingredients (except for the cinnamon and pumpkin pie spice) with a wooden spoon until smooth. Add a little cinnamon and pumpkin pie spice. Mix together again and pop in the oven for 1 hour.
This was REALLY easy to put together, however, next time I will mix all my dry ingredients together first so as to get most of the flour clumps out of the way. I'm also debating about making it more of a side dish than dessert by adding some onions...it's not super sweet, but somehow reminds me of a pumpkin bisque in semi-loaf form. Hmmm...
