Apple Enchiladas

1 can apple pie filling
10 medium flour tortillas
1 teaspoon cinnamon
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1/2 cup water

Preheat the oven to 350 degrees. Spread the apple pie filling evenly between the tortillas. Sprinkle with cinnamon, roll, tuck and place seam side down in a casserole dish. In a pot over medium heat, combine the sugar, brown sugar, butter and water; bring to a boil while stirring consistently. Pour the sauce over the enchiladas and let it stand for 45 minutes. Bake in the oven for 20 minutes or until golden. And YUM.

These were awesome. Just the right amount of sweetness. You can serve them warm with ice cream and/or whipped cream. I think I might make a sweet cream sauce to pour over before serving next time. These were tasty and easy to make.
