Chicken & Cream Cheese Taquitos

6 slices bacon, chopped
1/2 of an 8 oz. package cream cheese
2 cans of chicken breast (or leftover chicken)
8 medium flour tortillas
Vegetable Oil

Cook up your bacon until it's nice and crisp, then lay the strips out to dry. In a medium mixing bowl, combine the bacon, cream cheese and chicken. Cut each tortilla into 3 even strips. Place a small amount of the chicken mixture (about 2 tablespoons) into the middle of each strip. Roll up the tortilla and secure with a toothpick. In a pan, pour about an inch-deep of vegetable oil and heat it up. Place the taquitos in the pan and fry until all sides our brown (watch out for popping chicken). Remove the taquitos and lay out to dry.

Annnnnnd voila! I made these for a Mexican-themed BBQ we were having and man, oh, man...these were gone within minutes. Small enough to be a nice snacky and very flavorful. I think next time I would add some green onion to the mix too. Hey, even B said these were REALLY good. You know that means they were awesome.
