Mexican Meatloaf

1 pound ground turkey
1 egg
1 1/2 cups crushed tortilla chips
2 tablespoons taco seasoning
1 cup salsa
1 cup shredded cheddar cheese
Tortilla Chips
Shredded Cheddar Cheese

Preheat the oven to 350 degrees. Mix all ingredients together in a large mixing bowl. Pour mixture into a greased baking dish and layer with whole chips & shredded cheese. Bake for 45 minutes until done.

Easy. Peasy. Cotton. Breezy. This is my mom's recipe and I make it quite often. B isn't fond of it only because I make it ALL. THE. TIME. It tastes good as leftovers, it tastes good in a sandwich or in a burrito or in a rice bowl or on a salad. It tastes good ALL. THE. TIME.
