Mashed Sweet Potatoes

3 large yams
Butter
Brown Sugar

Wash and peel the yams, then cut into small quarters (they steam faster this way). Steam the yams for about 14-16 minutes, or until soft. Scoop them into a large mixing bowl. Add the butter and carefully mix; you want the yams to lightly mash so that you still have chunks. Add the brown sugar and mix again.

I used a LOT of butter and a little bit of brown sugar (partially because I like the taste of yams with butter and I didn't want a lot of sugar for the kids). I think the next time I might add a bit more brown sugar though and less butter (seriously, there was a TON of butter).
