Sour Cream Mashed Potatoes

3 Large Baking Potatoes
2 Green Onions
Butter
Sour Cream
Salt & Pepper, to taste
Basil

Wash the potatoes really well, then chop them into medium-sized chunks. Steam the potatoes for about _ minutes or until almost crumbly. Dump the potatoes into a mixing bowl and add in the butter and sour cream (your decision on how much you want). Carefully mix together; the potatoes shouldn't really "mash", but crumble so that you have partly mashed and partly chunky potatoes. Add in the green onions, basil and salt & pepper; carefully mix again.

This was really easy to make (I know I say that a lot, but seriously, I am not good at complicated recipes). Bryce isn't a fan of a lot of sour cream, while I am.

However, we had the potatoes as left-overs the night after and they tasted even better after they sat overnight. I believe it was because of the green onions. So maybe next time I'll make them the night before and let them sit.
